Smoky Cabbage & Chicken Skillet

Here's the thing about cabbage — most people cook it wrong. They dump it in, stir it constantly, and end up with a pile of soft, steamed mush. That's not what's happening here. We're treating it like we treat everything else in the cast iron: leave it alone, let it make contact with the pan, and let the heat do its job. You get caramelized edges, a little char, and a vegetable that can actually hold its own against seasoned chicken and smoky black beans.

Rabble Dust does the heavy lifting on seasoning. The coffee, lemon zest, and sesame in the blend cut through the richness of the chicken and tie the whole skillet together. It's an anything seasoning for a reason.


What You'll Need

  • 1 lb chicken breast, cut into bite-size chunks
  • ½ head green cabbage, rough chopped
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 3–4 cloves garlic, sliced
  • 1 green bell pepper, diced
  • 2 tbsp olive oil
  • 1½ tsp Rabble Dust
  • Salt and black pepper
  • Splash of apple cider vinegar, to finish

Optional: Serve over couscous — it's a 5-minute starch that soaks up every drop of pan juice.


How to Make It

Step 1 — Sear the chicken. Get your cast iron ripping hot over medium-high. Season the chicken chunks with salt and half the Rabble Dust. Add oil, then lay the chicken in a single layer. Don't touch it for 3–4 minutes — you want a real crust, not a steam. Flip, cook through, then pull it out and set it aside.

Step 2 — Char the cabbage. Add a little more oil if the pan needs it. Toss in the bell pepper and rough-chopped cabbage. Here's the move: leave it alone. Don't stir for the first 2–3 minutes. You want the cabbage to make contact with the hot pan and develop color on the bottom. Then toss, and let it go again. This is where the flavor happens.

Step 3 — Build the skillet. Add the sliced garlic and cook 30 seconds until fragrant. Add the black beans and frozen corn, stir everything together. Sprinkle the remaining Rabble Dust over the vegetables and toss to coat evenly.

Step 4 — Finish it. Nestle the chicken back into the skillet. If the pan looks dry, hit it with a small splash of water or broth. Cover and let it steam for 3–4 minutes until everything is heated through. Finish with a splash of apple cider vinegar, taste for salt, and serve.


A Few Notes

Don't crowd the chicken. If your pan is small, sear in two batches. Crowding drops the pan temperature and you end up steaming instead of browning. The crust is worth the extra step.

The cabbage wants heat, not movement. Resist the urge to stir constantly. Caramelized cabbage tastes nothing like steamed cabbage — trust the process.

Couscous is the right call. It takes 5 minutes, needs no babysitting, and absorbs the pan juices better than rice or pasta. Cook it while the skillet finishes and serve everything together straight from the pan.

Bean swaps work. Black beans are the move here, but pinto or white beans are equally solid if that's what you've got open.


Storage

Fridge in an airtight container, up to 4 days. Reheat in the cast iron with a splash of water to loosen. If you served it over couscous, store the starch separately so it doesn't absorb all the liquid overnight.
